Sun-Dried Tomato Hummus

Ingredients

  • 1 jar (7 oz.) sun-dried tomatoes in oil, drained, reserving 4 Tbsp. oil
  • 4 tablespoons water
  • 1/2 cup tahini
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic, peeled
  • 1 teaspoon hot sauce
  • 2 cans (16 oz.) chickpeas, 1 drained and 1 undrained
  • 1 1/2 teaspoons ground cumin
  • 1/2 teaspoon dried rosemary
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper

Directions

  • Place ingredients (including reserved oil) in a blender and attach lid.
  • Blend on high, stopping to scrape sides if necessary, until mixture is smooth and well combined.
  • Refrigerate leftovers.
