Maple Sugar Brûléed Salmon

Sprinkle salmon with maple sugar and torch before serving for a unique presentation.

Ingredients

  • 1 pound salmon fillet
  • 2 teaspoons olive oil
  • 1/2 teaspoon coarse salt
  • 1/2 teaspoon ground pepper
  • 1 tablespoon maple or turbinado sugar

Directions

  • Preheat oven to 400°F. Line a baking sheet with foil.
  • Pat salmon dry with a paper towel and place on pan skin side down. Brush with oil and sprinkle with seasonings.
  • Bake for 13-15 minutes, or until the salmon is cooked to your preference.
  • Sprinkle 1 tablespoon maple or turbinado sugar on top of the cooked fish. Slowly move the kitchen torch back and forth, until the sugar is caramelized.
  • To brûlée in the broiler, remove fish 2 minutes prior to its finished cooking time. Set the oven to broil. Sprinkle 1 tablespoon maple or turbinado sugar on top of fish. Place the baking sheet on the top rack and cook for about 1-2 minutes, keeping the oven door ajar and checking constantly. Rotate pan so the sugar is evenly caramelized.
  • Refrigerate leftovers.
