Gluten-Free Turkey Chili

Ingredients
- 2 tablespoons extra-virgin olive oil
- 2 cloves garlic, minced
- 1 yellow onion, diced
- 1 pound Simple Truth™ Natural 93% Lean Ground Turkey
- 2 teaspoons salt, divided
- 2 teaspoons ground pepper, divided
- 1 can (14.5 oz.) Simple Truth Organic™ Diced Tomatoes
- 1 can (15 oz.) Simple Truth Organic™ Dark Red Kidney Beans, drained
- 1 can (15 oz.) Simple Truth Organic™ Dark Red Kidney Beans, drained
- 1 can (15.25 oz.) sweet golden corn, drained
- 1 bell pepper, diced
- 1 cup vegetable stock
- 2 tablespoons chili powder
- 1 tablespoon cumin
- 1 cinnamon stick

- Chopped green onions
Directions
- In large sauté pan over medium-high heat, add oil. Once shimmering, sauté garlic and onion 1 minute. Add turkey; season with 1 teaspoon salt and 1 teaspoon pepper. Cook 8 minutes, stirring often, until turkey is browned (safe internal temp. 165°F).
- Transfer turkey to slow cooker. Add tomatoes, kidney beans, black beans, corn, bell pepper, vegetable stock, chili powder, cumin, cinnamon stick, remaining 1 teaspoon salt and 1 teaspoon pepper. Stir, combining well.
